SICILIAN PASTA SALAD with pesto
2 lbs. ziti, penne or other pasta, cooked
Pesto Sauce:
2 cups fresh basil leaves
1 / NUTS 2 cup walnuts or pine (Optional)
4.6 large garlic cloves, minced or pressed
1 cup olive oil
1 1 / 4 cup grated Parmesan cheese
3.4 anchovies, mixed (optional)
1 / 4 c. Tea pepper flakes
Pinch of black pepper
Salt to taste
Place olive oil in a saucepan, add the chilies, garlic, red imported Parmesan cheese and herbs and spices. Mash anchovies in oil until blended. Bring to a boil for 1 minutes, and immediately take off the stove.
Pour this mixture over the hot cooked pasta, mix well and serve with bruschetta.
It can be served at room temperature.
